Equinox is our Port cask release.
The ex-Port fill casks were resized to 164L (over-sized) quarter casks by Speyside Cooperage and are filled with our new make spirit only on a Vernal or Autumnal Equinox. Disgorging also takes place on a Vernal/Autumnal Equinox. These dates are significant in so much as they reflect the scarce nature of this whisky. We only fill a few casks a year.
Using small casks* gives us a greater surface area compared to the volume of liquid such that the influence from the wood is, in effect, accelerated. So despite being in wood for just 3 and half to 4 and a half years, the flavour profile and complexity is insane for its age. As such we cut to around 43 - 44% ABV so as not to overpower the senses, and a small splash of water will really help to draw out the myriad of flavours and aromas.

* Scottish distilleries, and most English distilleries, will rest their new make in casks of usually 225-250L capacity, but can be up to 700L capacity for at least the first 3 years. They then may 'finish' the whisky in smaller casks as special releases. This does not give the same flavour profile as a whisky that has been aged entirely in smaller casks.
